We all know who @rootandbranchcoffee is right..No? Well they’re the reason I fell in love with Specialty Coffee, their tiny (and I mean tiny 🙈) Micro Roastery on Jameson street, Belfast, which was just down the road from my house, Had me visiting almost every weekend 😅. Since 2016 their roots have grown and are in my opinion one of the best coffee roasters in Ireland and their also now operating two cafes and an Awesome Roastery in the East all in 3 years 🤘🏻. Today's coffee is one of their latest offerings which is a 24hr Macerated Naturally processed coffee from Honduras and it comes in a beer can 😅 their new packaging is 👌🏻 and Nitro flushes which keeps the beans fresh for up to 3 months.

Donaldo Gonzalez is the general manager and founding member of the Aruco cooperative. He also owns his own farm, Sol Naciente. His 7 hectare farm is mostly planted with red and yellow catuai, be he’s also now planting Lempire, Parainema and IHCAFE90. His yellow catuai cherries are showing much higher sugar and acid levels than other cherries, which gives this cup a really sweet and unique profile.

THE COFFEE

Producer: Donaldo Gonzalez Fiallos. Origin: Honduras 🇭🇳. Variety: Parainema & Catuai. Process: 24hr Macerated Natural. Altitude: 1250m. Roast: Filter TASTE NOTES

An absolute banging coffee, The cup was really Juicy and Bright with these big taste notes of Sweet Pineapple, Very vibrant with lots of acidity, the acidity reminded me of Grapefruit 🙌🏻 As the coffee cooled down the acidity started to settle and Finishes very sweet and clean ❤️ THE SCORE
