Today see’s our last offering from @andytownsf and it’s a Naturally processed coffee from The Santa Sofia Farm in Guatemala, we reviewed their Washed version of this coffee and Thought it to be possibly over roasted with a lot of unwanted taste notes in the Cup. So Check out our thoughts on this version ⬇️ At Santa Sofia, the coffee is rotated in strictly controlled mechanical dryers and then it is rested between dryings, to stabilize humidity. Once the coffee reaches an ideal humidity, it rests for at least three weeks before getting sent to the dry mill.
⬇️T H E - C O F F E E⬇️ Farm: Santa Sofia Origin: Guatemala 🇬🇹. Variety: Caturra, Catuai. Process: Natural. Roast Level: Light - Medium . Taste Notes • The coffee produced a really full body, like I mean really Full! with a Smooth syrup like mouthfeel that resembled Caramel. The most dominant taste note that is very much noticeable is Nuts. It’s a very nutty coffee, I thought that it most resembled Almonds. It was a beautifully balanced with great Apple like acidity. You get Almonds at the start and thats exactly what you get at the end of the cup. That Nutty taste just travels right through the cup, right to the last sip. A beautifully Nutty coffee with great balance, I actually really enjoyed this cup and much preferred It to their Washed version. It got Sweeter and more and more nutty as the cup cooled.
