At Carrow it’s all about the light and medium roasts, this allows the bean’s amazing natural flavours and sweetness to really shine through. They also source their beans from small farms, this means that their range of coffees will change from season to season, but that is something that we can all get excited with 🙌🏻 This microlot comes from the roughly 300 trees grown by Filomeno Rodriguez López on his El Pensamiento farm in Guatemala's Huehuetenango region near the Mexican border. Once picked, the coffee is de-pulped and fermented dry for 24–36 hours before the mucilage is removed and the beans are dried. T H E - C O F F E E Farm: El Pensamiento Origin: Guatemala 🇬🇹. Variety: Caturra, Green Pache, Catuai (Microlot) Process: Washed Roast Level: Light - Medium . Opening the Bag • Chocolate Aromas with hints of Raisins. Taste Notes • The cup produced a very Milky mouthfeel with taste notes of Dark Chocolate, that dominated the cup. As the cup cooled the dark chocolate notes started to soften and in came a slight fruity note that smoothed the cup out, pushing that Dark Chocolate note out of the way. .
